Can you pull an UL out an UL Fantasy Pack during the week, or just the weekends?

I understand you can only get the limited cards on the weekend, but do the latest UL releases stay in packs such as Deion and Young? Wondering if I should open my UL Fantasy pack now or wait until the week, but maybe there's a decent limited legend coming out.
