Can you still choose between PS4 and PS5 version after upgrading?

the force feedback is horrible - feels like the controller is breaking. way overdone. is there a way to tone it down or turn that off ?

You dont "upgrade". You can launch either the current or next gen app. They are about 45 GB each, but independent of each other. Your team is in each gen. You cannot start H2H in one and continue it on the other. Once you complete h2h on one generation, you can start it on the other.

I flip back and forth because I don’t want my son to know I have the PS5. So when he’s home I play the PS4 version with the black controller.

I got him his own for Christmas. So trying to keep it a secret that I got myself one. 😬
