I'd do the Superstar solos first. You need to get a certain amount of stars (check the milestones) to get an 89-90 NAT Superstar. That's quite a decent start to MUT.

They changed it from last year. Now you can control linebackers and defensive line via the dpad. Left button controls linebackers, right button controls the defensive line. If you double-click the left button on the dpad, you can choose which linebacker you want to quick adjust. There you can choose to blitz him as well.

You just need to hold LT (on XB) / L2 (on PS) when you are throwing. That's it.
